I think I actually got It to work now by manually changing the ROOT= in the cmdline.txt. I believe thats called hybrid boot?

So if I understand correctly now its still using the boot partition on my SD card to boot my Pi. But Linux is now running on my SSD. I could actually remove the SD card from my Pi while it was running. Now I'm only wondering, is the boot partition also something that receives updates and should those still be written to my SD card and not the boot partition on the SSD since the boot partition on the SD is the one that's actually being used during startup?
